Brunch at Skansen, according to Ida Bauhn

Verandan is a restaurant at Skansen, created by Ida Bauhn, Swedish Chef of the Year 2025. Here, the flavours of Swedish nature meet the generous brunch tradition. Classic tastes and food traditions take centre stage — sometimes exactly as they are, sometimes in a new interpretation.

The result is Ida’s take on a Swedish brunch, where the ingredients, the craft and the culinary traditions come first. Drinks are just as much a part of Verandan, with a focus on cocktails and Swedish wines.

I draw an enormous amount of inspiration from nature, and I think we have fantastic produce here in Sweden. For me it's essential to cook with the seasons and let the ingredient lead the way. I want to look after our Swedish farmers, producers and food traditions — but also make something playful and my own out of them.
